Partridge has been enjoyed, with enthusiasm, since the time of the ancient Romans. It is not a native North American bird, originating in Europe, the Near East and Asia. It was introduced to England in the late 18th century; since then, the partridge shoot has become one of the most popular national sports. The partridge family also includes pheasants, quail and chickens. The European grey partridge, introduced to North America has a mottled brown back, grey speckled breast and patches of chestnut on the sides. The wings are rounded and short.

Partridges are small to medium-sized (15-45 cm/6-18 in length) birds. Farm raised partridge is a delicious tender game bird, some say the most flavorful. Its meat is very lean and dark, similar to pheasant but firmer and not as delicate. Partridges are known for their heavy, muscular breasts and are rather plump.Partridge meat, when well prepared, is flavorful, tender, and quite juicy.
