Most red game meats are grass fed therefore low in fat, but what little fat there is is high in omega 3 fat. There is virtually no marbling in the meat so preparation of steaks is done best at high heat to medium rare at most.

Black Angus - Elk- Wapiti

				Elk- Wapiti

Elk meat is venison as well as other deer species, but because of their grazing nature there meat tends to be much milder than their wild cousins, the whitetail. The Elk diet will consist of 80% grasses. Due to their high concentration of green feed, their fat content,of which there is very little,is high in Omega 3 fatty acids, the fat we need to add more of to our unbalanced diet. Produced in a range-free environment, Elk is an obvious choice for health-conscious, ethical consumers who want to enjoy the rich, sweet, tender taste of a naturally superior red meat that is both lean, yet rich in texture and full of natural flavour.

North American Elk, one of the largest mammals in North America. These majestic creatures range at the forest edge for the most part as the are pasture feeders when such is available. They have proven very adaptable to areas they have been introduced or reintroduced, such as Ontario. However being that their preferred ranges have now been populated by humans this is causing havoc in certain areas. This is one of the reasons that the animals were near extinction in the late 1800s when European settlers had been both over hunting and eliminating them as pests as they competed with introduced live stock for pasture. The males can grow to a live weight of 1000 lbs, females about half that.
