Kangaroo meat is very lean with less than 2% fat. Kangaroo meat is one of the most environmentally friendly sources of protein on earth, and emits 1/20 of methane gasses that cattle would. Additionally, it provides a good source of high quality protein, important vitamins and minerals such as iron and zinc. Kangaroo meat has few connective tissues, which allows for fine textured soft meat.

"THIS LAND IS CURSED: THE ANIMALS HOP, NOT RUN,BIRDS RUN, NOT FLY AND THE SWANS ARE BLACK NOT WHITE" Since kangaroo has virtually no fat (which holds a lot of moisture) it can easily dry out during cooking and must be carefully cooked. We recommend searing to prevent moisture loss, it should then be placed in a very hot pan and quickly turned over to ensure all sides are 'seared'. Always serve as medium rare.
