Since kangaroo has virtually no fat (which holds a lot of moisture) it can easily dry out during cooking and must be carefully cooked. We recommend searing to prevent moisture loss, it should then be placed in a very hot pan and quickly turned over to ensure all sides are 'seared'. Always serve as medium rare.
